CHEF HANS NEUKOM HAILS THE HEALTHY SALT


A
fter a little over four years of living in the Philippines, Swiss-German chef Hans Neukom has formed two interesting notions on Filipino food. First, Filipinos generally go for the strong pull between salty and sweet. Second, Filipino food’s identity is fuzzy vis-à-vis, say, Thai or Malay food, but therein lies the challenge for Filipino cuisine to evolve more fully by using pan-Asian herbs and spices that are also found in the country.

Chef Hans tackles these two challenges manfully—and joyfully—as resident chef of the Palms Country Club in Alabang by reeducating the Filipino palate. He recalls that for a time many members were asking for a “sweeter” spaghetti sauce—doubtless the standard taste of many a spaghetti sauce variation in the country. But he had consistently refused to put sugar in the sauce—“unless requested by a member for his or her child or guest,” Chef Hans says. Likewise, Chef Hans goes easy on the salt to balance the tendency of many Filipino diners to season their food with the usual soy or fish sauce.

Statistics at the Department of Health claim that 1 of 10 Filipinos aged 15 and above has hypertension, while a 2004 National Nutrition and Health Survey reports that 4 of 10 Filipinos aged 20-29 are pre-hypertensive and require a lifestyle change to prevent progression to hypertension.

The human body needs only very small amounts of both Sodium and Chloride. Common salt composed of 98-100% Sodium Chloride, is known to be the most significant cause of high blood pressure, also called arterial hypertension. Even a small raise in blood pressure increases the risk for coronary and other serious cardiovascular diseases, such as heart attacks, strokes, or heart failure.

In most countries, the per capita consumption of salt is known to be far too high compared with what is required by the body to function properly. Doctors and health organizations recommend that Sodium Chloride intake be reduced in order to limit the negative impact on the cardiovascular system. This is supported by the recommendations of the World Health Organization and Food & Agriculture Organization (Diet, Nutrition and the Prevention of Chronic Diseases Report 2003, Geneva) that the daily salt intake should be less than 5 g per day.

Various studies show that the harmful effect of Sodium Chloride can be decreased or even eliminated if our diet is rich in Potassium and Magnesium. Adequate Potassium intake lowers blood pressure and is protective against stroke and cardiac arrhythmias.

After years of research and in line with these studies, Finnish researches have developed PANSALT®.

STUDIES ON THE EFFECTS OF PANSALT®

ANSALT® is probably the world’s most researched low-Sodium salt. The formulation of PANSALT® involved hypertension and health specialists and has been tested for safety by a multi-disciplinary group in Finland comprised of representatives from the National Public Health Institute and Department of Community Health and Research, Institute of Public Health.

A study on PANSALT® noted a correlation between its use and diabetes, with an improvement in oral glucose tolerance. Other studies showed that PANSALT® does not interfere with anti-hypertensive medications including ACE Inhibitor Enalapril, Ramipril, Metoprolol, Felodipine, and Carvedolol. Double blind trials show its benefits on high blood pressure patients in general.

PANSALT® inventor, Dr. Heikki Karppanen of the University of Helsinki in Finland also produced a landmark study to show how salt reduction and the use of PANSALT® helped contribute to the heart health in Finland over a period of 20 years.
In recent studies, the effects of PANSALT® have been extensively compared with those of common salt. The following are the results:

Effects on Taste
PANSALT® produces the same savory taste as common salt in various food items.

Effects on Blood Pressure
PANSALT®, instead of common salt in the diet, effectively lowers blood pressure both in spontaneously hypertensive rats and stroke-prone spontaneously hypertensive rats, two widely used models of human hypertension. A good anti-hypertensive effect of PANSALT® in humans has also been reported. PANSALT® also produced a pronounced improvement in the blood pressure lowering effect of Enalapril (Renitec/Vasotec) and other widely used anti-hypertensive drugs.

Effects on Life Span
PANSALT® prolonged the lifespan of spontaneously hypertensive rats more than three-fold and almost to the same extent as withdrawal from all salt from the diet.

Importance of Potassium, Magnesium, and I-Lysine in PANSALT®
PANSALT® Potassium and Magnesium have beneficial effects on blood pressure, the heart and blood veins. Their protective effect is even better than the effect gained by a reduction of Sodium only.

Potassium and Magnesium also activate the function of the kidneys and in this way, enhance the excretion of harmful Sodium from the body. In PANSALT® mineral salt, there is 28% Potassium Chloride and 12% Magnesium Sulphate.

Lysine, an essential amino acid is a protein component of PANSALT®. Lysine enhances the salty taste of Potassium and Magnesium in PANSALT®. It also completely masks the bitter taste typically originating from Potassium Chloride and Magnesium Sulphate. There is 2% Lysine Hydrochloride in PANSALT®.

Iodine is necessary for the proper brain cell development in children, and their cognitive development. Iodine deficiency leads to goiter problems. The amount of Iodine in PANSALT® is 25mg/kg. This is based on the official recommendation of the National Food Agency of Finland.

Absence of Adverse Effects
No signs of hyperkalaemia, hypermagnesaemia, or any other harmful effects have been observed during the use of PANSALT®.

Conclusions:
The use of PANSALT® instead of common salt produces remarkable anti-hypertensive effects, prolongs the life span and markedly improves the effects of commonly used anti-hypertensive drugs without any signs of adverse effects.

Does PANSALT® contain salt?

Yes. In fact, PANSALT® is salt. Its unique patented formula allows for the reduction of its Sodium content. PANSALT® only has about half the Sodium found in common salt and is made nutritive by the essential minerals Potassium and Magnesium-- two important minerals for a healthy heart, not contained in common salt.

Who invented PANSALT®? How did PANSALT® come about?

PANSALT® is a quality innovation in health foods spearheaded by Heikki Karppanen, M.D., a Professor at the University of Helsinki, Department of Pharmacology and Toxicology in Finland.

Dr. Karppanen became involved in the study of salt and its harmful effects after he learned about the high incidence of heart attacks leading to deaths among families in North Karelia, Finland where they lived. He later discovered that it was the high Sodium and low mineral content in the soil in their area affecting their food chain that brought about these heart problems and deaths.

This inspired Dr. Karppanen towards the invention of PANSALT®. Together with Dr. Mildred Seelig, a Magnesium expert from the American College of Nutrition, studies towards the development of PANSALT® were completed. The collaboration of the two experts may be found in the Journal of the College.

Where does PANSALT® get its name?

“Pan” means “something general”, so PANSALT® could mean salt that can be used in all foods.

Is PANSALT® an organic food?

Being a Sodium-reduced mineral salt, PANSALT® has been approved as an ingredient for organic food products by the National Food Agency of Finland and the European Commission since 2001.

How is PANSALT® made?

PANSALT® is produced in Europe through a patented manufacturing process under GMP (Good Manufacturing Practice) conditions. Its quality is equal to that for the making of pharmaceutical drugs.

Why is common salt harmful to me?

Common salt is 98-100% Sodium Chloride. Our body needs only small amounts of Sodium to function properly. The WHO (World Health Organization) recommends a dietary salt intake of less than 5g per day due to its high Sodium content.

In the average Filipino diet, our salt intake goes up to as much as 10-15g per day. Our use of condiments like toyo, patis and bagoong adds even more to our Sodium intake. Why is PANSALT® different from common salt?

Sodium Chloride, which is the primary component of common salt is harmful to the body when consumed in excess of the recommended dietary intake (less than 5g per day, per person). Other than Magnesium and Potassium, PANSALT® also contains Lysine, an essential limiting amino acid required for making proteins in the body. Lysine does not naturally occur in the human body and is consumed from daily foods like those containing PANSALT®.

WORLD ACTION ON SALT & HEALTH (WASH)

WASH is a global campaign to help prevent over 2.5 million deaths worldwide every year, caused by high salt consumption. The campaign, participated in by 194 medical experts from 48 countries was established in 2005 and formally launched last Oct. 4, 2006 to further the World Health Organization’s target of dietary salt intake reduction to less than 5g per day per adult to lower blood pressure globally.

To achieve its goal of saving lives, the organization aims to:

  • Persuade international food companies to employ a global salt reduction plan, so that not only will the salt content of their processed food products be reduced but it will be uniform in each country they market in
  • Ensure that the body of evidence from the scientific community about the dangers of excessive salt consumption is translated into policy by each individual Government around the world
  • Reduce salt added at home during cooking and at the table through a combination of media publicity and public health campaign e.g. the Food Standards Agency Campaign in the UK (http://www.salt.gov.uk/index.shtml

According to WASH research, there are variations in the salt levels in the same food products marketed in different countries around the world. A popular cereal brand for example that is marketed in the USA contains only 0.65g/100g salt, while the same product marketed in the UK and Ireland contains 2.25g/100g. Several other food products commonly consumed by both children and adults, including burgers and sandwiches served by multinational food chains were cited by WASH to contain varying salt levels in different countries. 

Campbell, WASH Project Coordinator, expressed concern saying that “The scientific evidence shows that eating too much salt leads to raised blood pressure, which in turn causes heart disease and stroke. High salt diets have also been linked to stomach cancer and osteoporosis. These huge variations in salt contents show that the excuses of the food industry – that it is technically too difficult to reduce salt, and that customers will not accept the reductions – are rubbish. WASH research shows food companies have reduced salt levels in some countries – we want them to reduce the salt in all their products in all their markets.” 

WASH is also concerned with the harmful effects of increased salt levels in children’s diets. A WASH research on products commonly consumed by children showed that a standard serving of a particular brand of cereal would already contribute 28% to a 6 year old child’s recommended daily salt intake.

WASH Chairman, Professor Graham MacGregor finds inspiration in the experience of Finland wherein a salt-reduction campaign since the 1970’s has led to a population-wide reduction in blood pressure and a parallel reduction in deaths from strokes and heart disease. In the USA, the American Medical Association has also recently voted to reduce the amount of salt added to food by industry by at least 50% in the next ten years.

SALT ALSO DRIVES OBESITY


Obesity and diabetes are two tightly interlinked conditions that almost always cannot exist without each other. Weight and fat gain, a high-salt and –sugar diet, and a sluggish lifestyle could all conspire to raise the levels of blood glucose and blood fat. Such conditions in turn raise health risks that, if untreated, could lead to more serious physical problems, among them type-2 diabetes.

Health-indicator statistics of the Department of Health rank diabetes as the ninth-leading cause of death in the Philippines, affecting one out of twenty-five Filipinos. Some 3.36 million Filipinos are estimated to be afflicted with diabetes, which is a chronic disease characterized by high blood-sugar levels resulting from defects in the body’s ability to use and produce insulin.

While the link between obesity and diabetes has long been established, recent findings have traced the relationship between salt intake and obesity. In a recently published report in the journal Progress in Cardiovascular Diseases, scientists from Finland claimed that the increased intake of salt has apparently played an important role in the increased consumption of soft drinks, and therefore in the increase of energy intake.

Dr. Heikki Karppanen of the University of Helsinki and Dr. Eero Mervaala of the University of Kuopio wrote, “Higher consumption of sweetened beverages was associated with both a greater magnitude of weight gain and an increased risk for development of type-2 diabetes.”

The groundbreaking research also noted the worldwide trend in the increase of age-adjusted blood pressure since the late 1980s. This increase, wrote the authors, “appears to coincide with the turn of the sales of food-grade salt from a decreasing trend to a rapid increase in the later 1980s and in the 1990s.” The study adds that increasing intakes of sodium found in common salt necessarily produce a progressive increase in thirst; and between 1997 and 2001, the energy intake from soft drinks also increased by 135 percent, adding about 278 kcal to the average person’s daily energy intake.
Common salt contains only sodium chloride, which is known to be the most significant cause of high blood pressure. Even a small rise in blood pressure increases the risk for coronary and other serious cardiovascular diseases, such as heart attacks, strokes or heart failure. It is a medical fact that the human body needs only very small amounts of both sodium and chloride.

The Finnish research drives home the relationship between salt and calorie intake that could lead to obesity and other health problems. But while people cannot live without these flavors, their consumption could be moderated to healthier levels. There are also healthier options now widely available, so while it’s not yet too late to switch to more health-conscious ways, it would be wise to explore healthy forms of sugar and salt.

Where to start after one has identified that sodium is the hidden enemy in common salt? So-called salt-free seasoning blends are a mixture of flavorful dried herbs and spices that don’t contain sodium chloride. Salt substitutes, on the other hand, replace some or all of the sodium in salt with other minerals such as potassium or magnesium. Potassium chloride is a common salt substitute. But salt substitutes, or some low-sodium salts, often taste bitter and aren’t recommended for people on a potassium-restricted diet.
